We had the absolute best time this past weekend at @thehomesteadfestival! We learned a lot and heard from many favorites. We had a fun time with friends and ran into iconic influencers! We played in corn pits and napped hard in the wagon (well ok maybe just the littles did this 🤣). We found some cool vendors and found great deals on even greater products. We did some networking and made connections. It was overall a great opportunity for us to unwind for a few days and just have FUN! Let’s get the garlic ready to cure! 🧄 By curing our garlic, we’ll be able to store it in the basement for many months. 🧄 The best way to do this is to trim the roots and greens within a few hours of pulling the garlic from the ground. You’ll want to shake or brush off the dirt. And then you’ll want to put it in a cool, dry, well ventilated place (like the basement) for about 3 weeks. Hanging is best since it provides optimal air flow but we were being quick with this so for now it’s on paper towels and I’m just flipping it over regularly. #garlic #curinggarlic #curing #feralfarming #foodprep #foodstorage #foodpreservation #longtermstorage

☀️ We’re knocking on Summer’s back door and with that comes successful gardening and canning and preserving all of those berries that you’re picking! 🫙Now an easy way to preserve your berries is by making jam. But what exactly is jam? What is the difference in jam and jelly? What about a fruit preserve? So many people use “jam” to cover all of these things but we’re going to give you some quick definitions so you know what you’re actually making (or buying). 🍓 Jam- chopped or mashed fruit in a thick, spreadable mixture with fruit small fruit chunks 🍇 Jelly- the strained fruit juice (or tea if you’re using flowers) in a firm spread. There are no actual pieces of fruit in jelly! 🫐Preserves- whole or large pieces of fruit in a thick syrup 🍊Marmalade- a preserve but made with only citrus fruits (including the peel) 🍎Butters- puréed fruit and sugar creating a thick but smooth spread All of these can be water bath canned to enjoy all year. It has such a vast range of medicinal properties and should be embraced, not removed! 🌿We’re using it to make Plantain Salve. Katherine is alllll about pink so we decided to have some fun with our food. 🫜 We used beets from @grindstonegardens to make pancakes. 🍓 Then we used strawberries from @redclayfarm to make protein bars. Finally we used the beets & strawberries together to make a protein smoothie! Both kids loved it! We made enough to stock the freezer with pancakes for a while and turn some of the leftover smoothie into popsicles.
